easiest key lime pie

I’m so excited to share one of my all-time favourite recipes with you: Key Lime Pie. As a former professional cake decorator, I've made my share of intricate, multi-tiered cakes— and while those were fun to create, I've discovered a newfound love for simple, no-fuss baking. There’s something incredibly satisfying about whipping up a delicious dessert without needing a mixer or a laundry list of ingredients.

My husband Steve is a huge fan of Key Lime Pie, and every year for his birthday, that's his only request instead of the traditional birthday cake! And if I may be honest, I shriek with delight when I don't have to spend hours in the kitchen baking and decorating another cake. 🙃  

This pie is so delicious that I end up making it several times a year. Here's a little insider tip: I use regular limes instead of squeezing all those tiny Key limes. Trust me, it still tastes absolutely amazing and saves a ton of time.  And I can't take all the credit for this recipe as I've adapted it from the Betty Crocker Cookbook. 😋


Ingredients


Pie Crust:
  • 1 1/2 cups graham cracker crumbs
  • 1/3 cup melted butter
  • 3 tablespoons of sugar
Filling:
  • 1/2 cup freshly squeezed lime juice (about 3-4 regular limes or 16-20 key limes)
  • 1 (14 oz) can sweetened condensed milk
  • 3 large eggs
  • Grated zest of two limes (about 2 teaspoons)
Topping:
  • 1 cup of 35% whipping cream
  • 1/2 teaspoon pure vanilla extract
  • 1 tablespoon maple syrup or icing sugar
  • 1 teaspoon freshly grated lime zest (optional for garnish)
  • Thinly sliced limes (optional for garnish)


Instructions

  • Preheat oven to 350 degrees.
  • Combine melted butter, graham cracker crumbs and sugar in a 9 inch pie dish.
  • Stir to combine and press into bottom and up sides of pie dish. 
  • In a medium sized bow, whisk eggs until fluffy and add lime juice, lime zest and sweetened condensed milk.  Continue whisking until fully combined.
  • Pour lime mixture into prepared pie plate and place in preheated oven. 
  • Bake for 30-35 minutes until centre of pie is set.
  • Remove from the oven and allow to fully cool on a cooking rack.
  • For the topping, whisk whipping cream, vanilla and maple syrup until soft peak forms.  You can do this by hand with a little elbow grease.  
  • Spoon on top of pie.
  • Optionally you can add freshly grated lime zest and thinly sliced limes as a garnish.
  • Serve and enjoy.  
  • Place in fridge to keep cool.
